2 8oz boneless, skinless chicken breasts
2 granny smith apples
Juice from half a lemon
1⁄2 tsp cinnamon3 tbsp mayo
4 medium tomatoes
Poach the chicken breasts in water and set aside to cool. Once cool, shred chicken into small pieces. Peel 2 granny smith apples, remove the core and chop in small pieces. Add apples to a large bowl. Coat the apples with lemon juice and cinnamon. Add mayo, chicken pieces and some freshly chopped parsley. Cut the top of 4 tomatoes and scoop out their insides. Stuff the tomatoes with the chicken apple salad and serve.
