Citrus Roasted Olives

INGREDIENTS

2 1⁄2 cups mixed green and black olives (3⁄4 pound)
2 1⁄2 tbsp extra-virgin olive oil
2 garlic cloves
1 tsp dried oregano
1⁄4 tsp crushed red pepper flakes
1⁄2 tsp kosher salt
1⁄2 tsp freshly ground black pepper
1 tsp finely grated orange zest
juice of half an orange 1⁄4 cup flat-leaf parsley

DIRECTIONS

Preheat the oven to 450 degrees.

Mince the garlic. In a small baking sheet, toss the olives with olive oil, garlic, oregano, crushed red pepper flakes, salt and pepper and roast until sizzling, about 12-15 minutes. In the meantime, finely grate 1 tsp of orange zest and chop some fresh flat-leaf parsley. As soon as the olives come out of the oven, toss them with the orange zest, juice from half an orange and chopped fresh parsley. Serve warm.
