Hearty Salad


4 slices of good wheat bread
2 cloves of garlic
a sprig of fresh tarragon
1 tbsp sundried tomatoes in oil
sriracha sauce
1 tbsp olive oil
1⁄4 tsp salt

4 tbsp mayo
2 tbsp sour cream
black pepper
1 tbsp rice vinegar
10 sprigs of chives
2 tbsp grated Parmesan

2 handfuls of baby spinach
1⁄2 red onion
1 avocado
12 cherry tomatoes
Sharp cheddar


Let's start with the croutons, since they take the longest. Pre-heat the oven to 400 degrees. Dice the bread into crouton-sized pieces and place in large bowl. In a food processor, throw in the rest of the ingredients for the croutons and pulse until you have a paste. Mix with the bread pieces and place on a baking sheet. Bake for 10 minutes, until golden brown. I kinda burned mine, so keep an eye on it.

In the meantime, let's make the dressing. This one is easy: all the ingredients under "Dressing" go into the bowl of the food processor; don't even worry about cleaning it after making the crouton paste. Pulse the ingredients together until they are evenly mixed.

Check on the croutons, as it may be time to take them out of the oven.

Let's assemble the salad. Just dice up the red onion and the avocado and add to the salad bowls. Add the rest of the ingredients under "Salad". At the end, add the dressing and croutons. Enjoy!
