Proscioutto and Peach Salad
1 tablespoon olive oil
1 large ball of fresh mozzarella 8 thin slices of prosciutto
big handful arugula
drizzle of olive oil
salt and pepper
Cut the peaches in half and scoop out the pits. Grill the peaches for a couple of minutes, until they warm up and get some grill marks on them. Slice up the mozzarella into thin slices.
On each plate, place a handful of arugula. Top with sliced mozzarella, grilled peaches and prosciutto. Generously salt and pepper, then drizzle some olive oil on top.
