Warm Goat Cheese Salad
2 oz goat cheese
2 tbsp bread crumbs
3 tbsp olive oil
1 tbsp honey
4 strawberries almonds
Grate the lemon zest from the lemon and set aside.
Dressing: In a small bowl, combine the olive oil and honey. Add the juice of a lemon. Whisk well and set aside.
Goat cheese: Heat a skillet on medium heat. In a small bowl, whisk the egg. Put 2 tbsp of bread crumbs on a plate. Using a spoon, or your hands, form the 2 ounces of goat cheese in 2 small patties. I cheated a bit this time, and bought 1 oz goat cheese medallions from Trader Joe's. Dip each goat cheese medallion in the egg mixture, then cover it well in bread crumbs. Fry the goat cheese in the skillet for a couple of minutes on each side, until golden brown. Set aside.
Salad: On 2 plates, arrange a couple of handfuls of mixed greens. Slice 4 strawberries and some chives; adjust the amount of ingredients to your liking. Top the mixed greens with sliced strawberries, chives, almonds and lemon zest. Drizzle some dressing on the salad, and top with one of the goat cheese medallions.
